Amla is a South Asian gooseberry that has a very bitter taste. We usually eat the fruit by itself as a snack by cutting it into small pieces and dipping them in salt
Amla Uurukai is a sour and spicy side dish in which the amla pieces are marinated in salt, spices and acid for a few weeks until the fruit loses its bitterness. The dish is generally eaten in small quantities (1 tsp) with rice, pittu or other dishes.
Amla uurukai can also be used as a base for salad dressings, marinades or simply pasta salads or other non-South Asian dishes.
